At Restaurant Melba our work philosophy is based on:

    • Finding the best product, because that's the first step to a good meal. We seek genuine ingredient flavors and the ethical and sustainable production of the product. This is why more than 70% of the products we use are certified organic (fruits and vegetables, lamb, pork, chicken, oil, flour...). Our fish is wild caught and the rest of our raw materials come from small-scale artesan producers.
    • Create fresh, elegant cuisine, keeping in mind seasonality and based on traditional culinary techniques.
    • Provide sincere service and treatment for our customers, because every service is different and each customer is unique.
    • In line with our philosophy, we have stopped cooking foie gras, since the animal suffers greatly in its production.
